They have to soften and not brown too much.Towards the end of the 10 minutes add the basil stalks and let them wilt together.In the meantime cut the tomatoes in 4 and add all at once to the casserole with the bay leaf. Bring to a boil and let it simmer away for about 15 minutes. Then scoop them in a passe-vite and sieve gently. Return to the casserole and add the stock and some freshly ground pepper and bring to a boil again. Add the basmati rice and let it cook softly together for 5 minutes, turn of the gas and with the lid on let it be for 10 minutes more. The rice will be cooked by then. Eat as simple as it is now for a pure tomato flavour or add freshly cut herbs to your liking. A dash of crème fraiche will be a nice addition too! ...

Set aside and let the lightly browned cauliflower cool down a bit.In the meantime cut parsley, mint and onion with a sharp knife very fine. Set aside.Juice the lemon. When they start to splutter add onions and fry them on low heat till translucent. Add garlic, ginger and curry powder, give it a good stir and let it fry together for another 3 minutes.Add tomatoes and coconut milk, season with salt and pepper. Bring to the boil, then add cubes of pumpkin and chickpeas and, when a little dry, add some vegetable stock or water. Taste again and adjust when necessary. Let it cook till the pumpkin is done with the lid on, about 20-30 minutes, depending on the cube sizes.
