Ook voor als je niet glutenvrij eet, de recepten zijn eenvoudig aan te passen. Om het boek in je bezit te krijgen hoef je niet helemaal naar Australië! Het boek is ook bij Bol.com te bestellen, zie de link hierboven. In plaats van een Instant Pot kan uiteraard een ander merk (elektrische) snelkookpan worden gebruikt. Geen Instant Pot of pressure cooker? Je kunt dit gerecht ook heel makkelijk in een pan op het fornuis maken. Wij aten er volkoren basmatirijst bij. Hoe je deze rijst in de Instant Pot kookt staat onderaan het recept. Chicken Tikka Masala (4 personen) Saus: 1 theelepel gemalen koriander/ketoembar 2 theelepels gemalen komijn/djinten 1/4 theelepel gemalen kardemom 1 theelepel kurkuma 1 theelepel zout 1/2 theelepel versgemalen zwarte peper 1/4 theelepel cayennepeper 1 1/2 theelepel gerookt paprikapoeder 8 gram garam masala 8 gram verse gember, geraspt 360 gram gezeefde tomaten 45 gram tomatenpuree 120 ml kippenbouillon Kip: 30 ml olijfolie 680 gram kippendijen, in stukjes 1 grote ui, gesnipperd 120 ml kippenbouillon Verder: 6 gram garam masala 120 ml slagroom koriander of platte peterselie, fijngehakt Meng alle ingrediënten voor de saus in een schaal en zet apart. Zet de Instant Pot aan, druk op Sauté en zet de temperatuur op More. Wacht totdat Hot op het display verschijnt. Voeg de olijfolie toe, laat even heet worden. Bak de stukjes kip in twee gedeelten enkele minuten rondom aan. Haal de kip uit de pan en zet even apart. Voeg de ui toe en bak al omscheppend ± 3 minuten. Voeg de kippenbouillon toe en schraap met een houten lepel de aanbakse ...

... y to Eat I made several of her great tasting recipes. A wonderful book full of vegetarian, vegan and even a lot of natural gluten-free recipes. I feel very acquainted with her way of cooking and enjoying food: it’s colourful, healthy but not too, beautiful to look at and with depths of flavour.For this adapted recipe I used split urad dal (urid dal chilka) and peeled mung beans, instead of her use of red ones, because I like the taste and nutritional value of urad and mung and they tend to not fall apart. Use curry leaves fresh, when you can or buy a bag of frozen; dried will not do, they just taste like nothing.Ingredients (for 2 pers)½ pumpkin, or same amount sweet potatoes or carrots1 tbsp olive oil Salt and pepper2 tbsp of coconut oil2 cloves of garlic, roughly chopped4 cm of gingerroot, chopped fine1 dried red chilli12 curry leaves1 cinnamon stick1 onion, chopped fine1 heaped tsp of cumin seeds1 ½ tsp coriander seeds1 heaped tsp turmeric200 g mixed dal or red lentils ( e.g. 100 g chana dal, 30 g urad chilka, 40 g tuvar, 30 g red/masoor)1 tin of coconut milk4 dl vegetable broth2 handfuls of freshly picked nettle tops or spinach Some garden cress 2 tbsp toasted pumpkin seeds Pre heat the oven on 180°C.Clean your vegetables and cut into big chunks. Mix with some olive oil and pepper and salt and bake in the middle of the oven for about 20 minutes till lightly brown and done. Turn halfway. Put out the oven.While the vegetables are baking we prepare our dal:Wash the dal well and leave in the water till further use.Chop onion, garlic, ginger and, with the blade of your knife make a pulp of the garlic and ginger.Toast cumin and coriander seeds in a baking pan till they release their fragrances. Set aside and grind into powder.In a heavy-duty casserole or Dutch oven heat the coconut oil on medium heat and fry the onion with the garlic-gingerpaste for a couple of minutes. Add the dry chilli, curry leaves and cinnamon stick and fry together some more minutes on low heat.Add the cumin-coriander powder together with the turmeric and stir through.Then drain the lentils and add to the mixture with the broth and coconut milk. Bring to a soft simmer till the lentils are ready, about 20-30 minutes, depending on the kind of lentils you use.Add washed nettles or spinach, a squeeze of lemon juice and season to taste. I serve the dal on top of cooked brown basmati rice, topped with the roasted vegetables, a scoop of yoghurt, tomato chutney, some cress and toasted pumpkin seeds. ...
